For centuries, active agriculture has been practiced at Lerchenhof. Grains are grown in a natural way. The meadows are lovingly tended to and the fragrant hay is harvested sun-ripened.
Mindfulness, slow cultivation, proper use of resources, as well as gentle crop rotation are the secret to our healthy soils and their harvests in organic quality.
With great dedication and acumen, at the Castle Farm alongside herbs, organic honey, vegetables, fruits, and grains are grown and processed. Ground in the in-house mill into flour, our daily Castle Bread is made exclusively with sourdough. Fruits, vegetables, and herbs are freshly harvested every day and end up on the plates of our guests or are preserved for the winter. Going together with nature in the cycle enables a unique sovereignty and a very special Slow Food enjoyment.Schloss Brot, ausschließlich mit Sauerteig verarbeitet. For many years, the Carinthian wine bacon has been produced at the Lerchenhof butchery. The combination of Gailtaler bacon, wine from Carinthia, and Hans Steinwender's motto "Give the product time!" resulted in one of the finest ham bacon products. Much love in the production process and at least 12 months of maturation are the most important requirements for this unique bacon.
Our master butcher Hans Georg Fercher ensures the special quality. Fresh meat for the restaurant in the castle as well as sausage and cured products are created here with great skill and craftsmanship.

What we achieve and implement:
Energy self-sufficient
Our hydroelectric power plant ensures a 100% environmentally friendly energy supply. The micro-grid and heat pump system make it possible for us to heat completely self-sufficiently and “green”. As a result, we save an impressive 645,000 kg of CO2 every year. With this sustainable way of generating energy we are contributing to a better future and are sending a powerful signal for climate protection!
Waste avoidance
Through our suppliers and partners, we avoid packaging material as much as possible. Our orderly and controlled waste management in conjunction with measures to avoid waste help us to protect the environment. We do not use disposable items.
Zero kilometer restaurant
With over 60 regional product partners, we avoid long delivery routes in advance, thereby significantly reducing our ecological footprint. The unique flair and our hospitality make the castle a place of well-being and enjoyment.
Natural cuisine
Our natural cuisine is Slow Food certified. We cook honestly, completely without additives and with a high proportion of organic and fair trade products. Craftsmanship plays a decisive role in our Nuturküche and we know all our producers personally.
Water
Our three water sources provide excellent drinking water. We collect rainwater to irrigate our gardens and for agricultural use. We use water-saving shower heads in all our rooms, which ensure water savings of up to 40% - a contribution to protecting our natural environment.
Castle Farm
Although we are not officially certified as organic, we produce a variety of foods at our castle farm that comply with organic guidelines. Our range includes fresh meat, meat products, fruit, vegetables, organic honey, herbs, cereals and much more. You can find these products in our NULL Kilometer Restaurant, as well as in the Schatzkammer - our farm store.
Upcycling
Many of our furniture and fabrics are used in our castle according to the Cradle to Cradle principle. Our rooms, common areas and gardens have been developed with the circular economy in mind. Our printed materials and paper are made from certified, 100% recycled printer paper. The bin liners we use are also 100% recycled.
A place of power
The protection of flora and fauna on 14 hectares of natural landscape, together with interesting nature trails, a quiz and our sustainably managed castle farm in organic quality are balm for nature.

Energy saving
The televisions in our rooms are real energy savers. In stand-by mode, they consume just 0.5 watts. 60% of our lighting has already been converted to LEDs, which consume an average of just 9 watts. We are constantly striving to adapt our lighting technology. We do not use minibars - for the sake of climate protection. This saves us 1664 kg of CO2 per year.
Mobility
A shuttle service, e-charging station, bicycles and e-Vespas for guests and employees have long been a matter of course for us. Our Schloss Lerchenhof is also easily accessible without a car.
